Tandoori Chicken


Ingredients

6 Chicken thighs
1/4 cup lemon juice
Onion, chopped 1/2 small
Cloves garlic 4
Grated fresh ginger 1 tablespoon
Coriander seeds 3 teaspoons
Cumin seeds 1 tablespoon
lemon juice, extra 1 tablespoon
Salt 1 teaspoon
Paprika 1/4 teaspoon
Chilli powder - just a Pinch
Plain yoghurt - 1 cup
Red food colouring

Directions

Preparation time: 25 minutes + marinating
Servings: 4-6

Preheat oven to moderate 180°C. Remove the skin from the chicken pieces and brush the flesh with lemon juice; set aside to marinate for 30 minutes.

Place the onion, garlic, ginger, coriander and cumin seeds, extra lemon juice and salt in the small bowl of a food processor.

Process until the mixture forms a smooth paste.
Combine the spice paste with paprika, chilli powder and yoghurt and mix together until smooth.

Add several drops of food colouring until the mixture becomes a deep red colour.

Place the chicken pieces in a large shallow dish. Spread liberally with the spicy yoghurt mixture. Cover with plastic wrap and refrigerate.

Marinate the chicken for several hours or overnight.

Place the chicken pieces on a wire rack over a large baking dish. Bake for 45 minutes, or until the chicken pieces are tender and cooked.

Note:Tandoori Chicken is traditionally cooked over hot coals in a special clay oven called a tandoor, a method requiring some skill if the food is not to be burnt. Baking in a conventional oven also gives a delicious result.

Chicken Marsala
Chicken Marsala is a simple, but delicious old Italian favorite, that is always appreciated. It is also one of the most requested recipes on our website. Naturally, you can also prepare veal scallopine alla marsala.

Serves 2

2 chicken breasts, pounded thin
1/2 pound of mushrooms
1/4 cup olive oil
1/2 cup chicken stock
1/2 cup Marsala wine
2 tablespoons of butter
flour, spread on a plate
Salt and Pepper to taste
1.            Heat olive oil in large saute pan over medium-high heat.
2.            When the oil is hot, dredge both sides of the chicken breasts in flour, shake off excess flour and place in pan.
3.            Add the mushrooms and saute chicken and mushrooms until chicken breasts are lightly browned on both sides, drain oil and return to heat.
4.            Turn the heat to high, add the Marsala wine, and scrape loose with a wooden spoon all browning residues on the bottom and sides of the pan.
5.            Add butter and chicken broth and sprinkle with a little flour to thicken sauce.
6.            Cook until until the liquid is reduced by half, approximately 5 minutes. Transfer the chicken breasts to warm serving plates, pour sauce over them and serve.

Chicken, Parsley and Almond Salad

Ingredients
1 cooked chicken breasts, cold, sliced and shredded
2 handfuls flat-leafed parsley, fresh
1 tbsp extra virgin olive oil
0.5 lemon, juice only
1 pinch Maldon sea salt (or use table salt)
50g flaked almonds, toasted


Method

1. Using your hands, mix the parsley and chicken together in a large bowl or on a large plate.


2. Dribble over the olive oil and, still using your hands, toss to mix.


3. Squeeze over the lemon juice, sprinkle over the salt and tip in most of the toasted almonds and toss again. Sprinkle over the remaining almonds, and your work here on earth is done.
