1 cup chicken shredded
1 cup mixed vegetables, diced and boiled e.g. carrots, beans, peas, potatoes
coriander leaves chopped
2 - 3 green chillies chopped
slices of bread cut into round discs
2 eggs beaten with salt and pepper
oil for shallow-frying
WHITE SAUCE
2 tbsp butter
2 tbsp flour
1&1/4 cups milk
1/2 tsp salt
1/2 tsp white pepper
1/2 tsp mustard
For the white sauce, melt the butter in a sauce pan. Add the flour and stir to make a roux, making sure that the flour does not burn. Add the milk gradually, stirring continuously till it is of medium thick consistency. Add the salt, pepper and mustard. Stir. Remove from heat. Put the meat, vegetables, coriander leaves and green chillies into the white sauce. Stir well. Spread the white sauce on half of the bread discs and cover with the remaining bread discs. Dip each "sandwich"into the egg and shallow-fry.
Maida 25O gms
Oil 7 tbsp or 5O gms
Salt 1 tsp
Water 1/2 cup or as required
Filling
Chane ki dal 1/2 cup boiled
1 tsp coarsley crushed red pepper
1/2 tsp salt
In a bowl take salt, oil and water. Add in flour and mix well. Knead to a smooth dough then add in another tsp of oil and again knead till very smooth. Divide into 12 equal portions and shape them into balls. Leave them covered for 15-20 min. Take one ball in your hand, spread it a little and put 1 tsp filling in it and again re-roll it into a ball. Put oil on a flat surface and spread the kachori into a saucer size and deep fry on medium flame, till golden brown.
