In a small saucepan, bring 1 cup water to a boil.

RASMALAI



Ingredients

2 lbs Cows Milk or Ricotta cheese
1/2 cup sugar
32 oz half & half milk
A pinch of saffron
1/4 tsp crushed cardamom seeds
1/2 cup blanched almonds
2 tbsp crushed green pistachios

Method


Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
Bake at 350 degrees for 35 minutes or until it sets. It should not get brown.
Remove from oven, cool at room temperature and cut into 2" squares. Place them in a dessert bowl.
Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
Decorate with pistachios, chill for 2-3 hours and then serve.

GULAB JAMUN



Ingredients

1 cup Carnation Milk Powder
1/2 cup Bisquick - Pancake mix (Instead of Bisquick Pancake mix, use 1/2 cup all purpose flour and 1/2 tsp baking soda)
2 tablespoons butter -melted
Whole milk just enough to make the dough
2 cups Sugar
1 cup water
Oil for frying

Method

Make the dough by combining the milk powder, Bisquick, butter. Add just enough whole milk to make a medium-hard dough. Divide the dough into 18-20 portions. Make balls by gently rolling each portion between your palms into a smooth ball. Place the balls on a plate. Cover with a damp yet dry kitchen towel.
Heat the oil on high and then lower the heat to medium. Slip in the balls into the hot oil from the side of the pan, one by one. They will sink to the bottom of the pan, but do not try to move them. Instead, gently shake the pan to keep the balls from browning on just one side. After about 5 mins, the balls will rise to the surface. The Gulab Jamuns should rise slowly to the top if the temperature is just right. Now they must be gently and constantly agitated to ensure even browning on all sides.
If the temperature of the oil is too high then the gulab jamuns will tend to break. So adjust the temperature to ensure that the gulab jamuns do not break or cook too quickly.
The balls must be fried very slowly under medium temperatures. This will ensure complete cooking from inside and even browning.
The syrup should be made earlier and kept warm. To make the hot sugar syrup add mix the 2 cups of sugar to 1 cup of water. Add 4-5 cardamom pods, slightly crushed and a few strands of "Kesar". Mix with a spoon and then heat at medium heat for 5-10 minutes until sugar is all dissolved in water. Do not overheat, that will caramelize the sugar.
Transfer this hot syrup into a Corning serving dish. Keep warm on stove. Add the fried gulab jamuns directly into the warm syrup. Leave gulab jamuns in syrup overnight for best results. They can be served warm or at room temperature.

TANDOORI CHICKEN

Ingredients

6 To 8 Chicken thighs, skin -off 16 oz Plain low-fat yogurt 1 tb Ground cumin 2 ts Coarse ground black pepper 1 ts Ground cinnamon 1/2 ts Ground cloves 1/2 ts Salt 2 ts Paprika

Method
Slash chicken thighs in several places with small knife; place in shallow baking dish; set aside. In small bowl, combine yogurt, cumin, pepper, cinnamon, cloves, and salt. Pour over chicken; turn to coat well; cover. Chill 2 hours or overnight, turning occasionally. Preheat broiler. Place chicken thighs on broiler rack or foil lined jelly-roll pan. Broil 5 to 6 inches from heat, turning occasionally, 25 minutes or until chicken is tender. Place on serving platter; sprinkle with paprika.

Chilled Banana Custard

Ingredients


1 cup nonfat milk , 1 whole egg , 2 egg yolks , 3 tablespoons maple syrup , 3 tablespoons whole-wheat pastry flour , 1 teaspoon vanilla extract , 1 tablespoon arrowroot , 1 tablespoon apple juice or water , 2 large bananas

Method


1. In a small saucepan over medium-high heat, heat milk until it steams. Remove from heat and pour into a mixing bowl. , 2. In a separate bowl whisk together egg, egg yolks, and maple syrup until smooth. Add flour and vanilla. Mix arrowroot with apple juice and add to egg mixture. Add hot milk. Puree bananas in a blender, then add to egg mixture. , 3. Return custard to pan and cook over medium-high heat, stirring, until thick. Pour into 8 dessert glasses and chill in the refrigerator for 4 hours before serving.

Method

Their quantity should be adjusted according to your needs and the size of the vegetable available. The following is a list of the vegetables that make a great dish, but you can adjust it according to your own personal likes/dislikes: Potato, Cabbage, Cauliflower, Eggplant, Radish, Bell peppers, Carrot, Peas, assorted beans, beetroot. Heat the oil and add all the ingredients and spices. Cover and cook on low heat till the water has dried and all the vegetables have become soft. It is better if they are a little bit crunchy. DO NOT ADD EXTRA WATER. LET THEM COOK IN THEIR OWN JUICES.

Bihari Kebab....hmmmm....my favorite....

Ingredients instructions

1/2 kilo beef pasanday (filets)
2 tbs unripe papaya (grinded)
1 tsp ginger paste
1 tsp garlic paste
Salt according to taste
2 tbs yogurt
1 tsp chili powder
OR
1tbs chopped green chilies
1 tbs oil.   
Mix together all the spices and yogurt and papaya and coat the beef with it.
Leave to marinate for 5-6 hours preferably overnight.
Then barbeque over charcoal or you can bake it
in an oven.
