Basil Couscous with Summer Squash
---------------------------------------

2 cups chicken broth
2 tbsp olive oil
1 tsp salt
1 cup couscous
1 cup zucchini -- 1/4" dice
1 cup squash, yellow -- 1/4" dice
1 cup basil -- slivered
1/4 cup Almonds -- toasted and sliced

Bring the chicken stock and 1 tbsp of olive oil to a boil in a medium
saucepan. Stir in salt and couscous. Remove from heat. Let stand covered for
5 minutes. Saute the zucchini and yellow squash in the remaining oil. Add
vegetables, almonds, and basil to couscous and mix well. Serve immediately.
Or carve out centers of zucchini or squash and steam shells. Fill with
couscous. Sprinkle with toasted sliced almonds.

INGREDIENTS

    * 1 (15 ounce) can crushed pineapple with juice
    * 1 cup plain yogurt
    * 1 banana
    * 8 cubes ice
    * 1 cup orange juice


DIRECTIONS

   1. Combine undrained can of pineapples, yogurt, banana, and ice cubes in a blender. Blend while adding orange juice until fruit is pureed and it is the desired consistency.

Pakora

Ingredients

    * 1/2 pound Chickpea flour (Gram Flour - "Besan" in local markets)
    * 1 teaspoon salt
    * 1 teaspoon red chili powder
    * 1 teaspoon coriander seed powder
    * 1/4 teaspoon baking soda
    * 1/2 teaspoon black pepper
    * 1 medium egg, beaten
    * 1 medium onion - chopped fine
    * 1 large potato -- 1/4" cubes
    * oil for deep frying
    * water, enough to make paste
    * Optional Ingredients - Spinach, eggplant, cabbage, fresh chilies

Directions

   1. Mix all dry ingredients in a bowl and add enough water to make a paste. Mix well.
   2. Take spoonful at a time from the bowl of paste and deep fry it in hot oil til golden brown.
   3. Serve with dipping sauces

mango Bread

Ingredients:
         2 cups flour, sifted
         2 tsp cinnamon
         2 tsp baking soda
       1/2 tsp salt
     1 1/4 cup sugar
          2  ;     eggs
        3/4 cup oil
     2 1/2 cups chopped mango (about 3 large)
         1 tsp lemon juice
       1/2 cup raisins

Combine first 5 ingredients. In a small bowl, beat eggs with oil and
add to the flour mixture. Stir in mangos, lemon juice and raisins.
Turn into 2 greased 8x4-inch loaf pans and bake at 350F (325F for glass
pans) for one hour or until a wooden pick inserted in the center comes
out clean.
