A Friend
A friend, a friend I have never known A friend, a friend That has shown A doorway to light A passage of hope A piece of forever And with this I cope A friend, a friend I will always hold dear A friend, a friend Who holds back my fear Of all the rage Of all the hurt Of all the words That are so curt A friend, a friend A friend indeed He is my friend And he will help me in need

Doubt
They bade me cast the thing away, They pointed to my hands all bleeding, They listened not to all my pleading; The thing I meant I could not say; I knew that I should rue the day If once I cast that thing away. I grasped it firm, and bore the pain; The thorny husks I stripped and scattered; If I could reach its heart, what mattered If other men saw not my gain, Or even if I should be slain? I knew the risks; I chose the pain.
O, had I cast that thing away, I had not found what most I cherish, A faith without which I should perish,-- The faith which, like a kernel, lay Hid in the husks which on that day My instinct would not throw away!

Friendship
When we were idlers with the loitering rills, The need of human love we little noted: Our love was nature; and the peace that floated On the white mist, and dwelt upon the hills, To sweet accord subdued our wayward wills: One soul was ours, one mind, one heart devoted, That, wisely doting, ask'd not why it doted, And ours the unknown joy, which knowing kills. But now I find how dear thou wert to me; That man is more than half of nature's treasure, Of that fair beauty which no eye can see, Of that sweet music which no ear can measure; And now the streams may sing for others' pleasure, The hills sleep on in their eternity.

Ice Cream
Ingredients
2 cups cocnut milk 1 cup water 4 eggs 1 teaspoon of vanilla or rosewater (optional) pinch of salt 2 tablespoons of shredded coconut sprigs of mint for garnish
method
Stir fry the coconut until golden (optionally use a few pieces of fresh corn... Thais often flavor ice cream with things considered unusual to western tastes).
Heat the coconut milk and water over medium heat, stirring continuously for a couple of minutes. DO NOT ALLOW TO BOIL.
In a bowl beat two eggs, plus two yolks, then add the other ingredients, and whisk gently.
Transfer the mixture to a double boiler over gently boiling water, and slowly blend in the hot coconut milk, stirring until the mixture thickens to form a continuous slightly sticky coat on the back of a spoon lifted from the mixture.
Remove from the heat and allow to cool, then transfer to a metal ice cream tray or similar container and place in the coldest part of the freezer for one hour.
Remove to a food processor and beat slowly until smooth (this incorporates some sir into the mixture and prevents it becoming too hard), then return to the freezer and complete the freezing process.

Try This little trick the next time you serve onions raw either as a garnish or in a recipe. After chopping or slicing the onion, place prepared onion in a bowl and fill with water to cover the onions. Toss in a few ice cubes and allow to soak for about 1 hour. Drain well before serving. You will have the crispiest, sweetest, best tasting onion ever.
